Paleo Pumpkin Muffins

Say what does that mean? Hehe. I have changed my eating habits to something called the Paleo diet, which I think of as more of a lifestyle change. Google it and it will tell you everything you would want or need to know about it. I'm loving it, but wanted something sweet this week and something fall-ish. So pumpkin was my choice! I can't use flour in anything, so my normal pumpkin bread was out, I looked up this recipe. And decided to slightly change it to the following:

Paleo Pumpkin Muffins #1
From PNW Fitness

1½ – Almond Flour/Meal

3/4 cup – Canned Pumpkin

3lrg – Whole Eggs

1 tsp – Baking powder
1 tsp – Baking soda
½ tsp – Ground Cinnamon
1½ tsp Pumpkin Pie Spice

1/8 tsp – Salt
1/4 cup – Agave Nectar (amber)

10g (1/3 scoop) – Vanilla Protein Whey

1.Grease 6 muffin tins with coconut oil
2.Mix all ingredients. Pour mix into the 6 tins.
3.Bake at 350F for 25 minutes on the middle rack.

I love them!


Semi-Wordless Wednesday: Spaghetti Squash

Method: Just get in there and cut it in half (lengthwise).

Scrape out the seeds and pulp as you would with any squash or pumpkin.

Bake rind side up about 30 to 40 minutes, in 1inch of water, at 375 F.

Fork out all of the insides,voila!

Veggie pasta! :)

I'm Baaaaaaaaaaaaack....

And ready to write! It has been almost 20 days ladies and gents and I'm so excited to be back in the blogging world. In my absence, I finished my finals, completed my last school semester for graduate school, got straight A's for it as well, packed up my apartment, drove from Florida to California, moved my best friend into her new house in San Diego, bid her farewell (ummm hard!), flew back to my hometown, set up all my stuff here, completed my first week of pre-planning for my internship and now I'm ready to start school tomorrow with my new students! Phewwwwwwwww! Busy 20 days but I missed you all terribly. I can't wait to share pictures of our awesome trip, but they are not back yet, so that will be ASAP. :)

But for now I wanted to share with y'all what I'm doing back home. (seems sooooo weird!) I moved back home to finish my masters by taking an internship at a title 1 school. What is that you ask? It's a school that has a certain number of students under the poverty line. My school happens to be located in a migrant farming area as well. I will be under a mentor teacher, who I got the pleasure of meeting this week and she is AWESOME!! And then eventually take over the classroom. Her class happens to be my dream grade, KINDERGARTEN!! So fun! I'm overly excited as you can tell to start this adventure of a lifetime. In December I will have completed my masters and graduate from UF again! hehe! :)

ultimate roadtrip has begun!

Blogging from my phone. There's a first time for everything! Finals have consumed me this week and im excited to say that im officially finished with the most stressful academic summer of my life! Today starts a new journey, a cross country roadtrip with my best friend! Our vacations are always an adventure and this one will be no exception!

Our route is taking us from Florida to New Orleans to Houston to Fort Stockton to Scottsdale to San Diego!! She will be living in the La Jolla area and I couldnt be more excited to share this with her! I will be tweeting the whole way across, so if you don't follow me already...tweet at me! @preppygator
