Monday Munchies...

On Wednesday. Haha. I made something fabulously Paleo this morning and people have asked for the recipe. I take basic recipes and make them my own. Usually using basic ingredients you would have in your kitchen and making yummy Paleo meals from them. I would love to write my own cookbook someday, but don't really know how to go about that. Maybe one day you will be reading my cookbook about Paleo meals. Until then, this will do!

We love breakfast around here so the first part of my recipe will be for my Egg Muffins. Gluten and dairy free!

Egg Muffins:
(mini recipe makes 6 muffins)

-6 eggs
-1/4 cup onion chopped
-1/4 cup green pepper chopped
-1/2 to 3/4 cup cooked sausage
(or cooked meat of your choice)
-1/2 teaspoon salt
-1/4 teaspoon pepper
-1/3 teaspoon garlic powder

Beat eggs. Add everything else. Spoon I to 6 well greased muffin tins. Bake at 350 for 20-25 minutes. I added salsa to the top for extra flavor.

Next is the sweet potato hash browns. I love potatoes as much as the next person, but white starches are a no for Paleo. So sweet it is! Gluten and dairy free as well!

Sweet Potato Hash Browns:
(6 small patties)

-1 large sweet potato grated
- 1/4 cup thinly sliced onions
-1/4 teaspoon salt
-1/4 teaspoon pepper
-1 Egg

Mix well. Make into patties. Heat pan to medium add olive oil or coconut oil. Cook well on each side until golden brown. I would say at least at 2 minutes in each. To make sure they stay together. I served it drizzled with natural honey.

It was the perfect pre-workout breakfast, filled us up and yummy too! Would you try this?

The Hunt...

J and his Dad have been hunting this season already, I went up to the cabin but didn't actually go hunting. Well this past Sunday J wanted to get a deer before the season ended and asked me to go with him. I think he was expecting me to say no, but I figured what the heck? I said sure! I would love to. I will spare you the pictures of the actual deer, but we got one!! 

This was my hunting gear, BEFORE they bundled me up in a bunch of extra layers 
that quite frankly made me resemble the michelin man. 

There he is looking mighty handsome in his little hunting seat. They use rifles, so a deer stand is really a waste. It was def more exciting not giving the deer bait or tricking them. We just had to wait until one came by, the old fashioned way. By the way this can take hours. 

 This is what I did, read on my kindle. Until I saw the buck! J needs new contacts and we hadn't seen anything for like 2 hours. So I started looking around and then I saw one! I got so excited I almost screamed. I made the sign to J for the buck and we waited for him to come closer. He took off so J got an eye on him pretty far away and took a shot. He looked for him everywhere up on the hill and we couldn't find him. :(

 This is just a pretty shot of the sky. :) 

 Don't worry there is a happy end to our story, we were walking up to leave and I saw the white belly of something laying down. Sure enough there he was, our sneaky 5 point buck who almost got away! The stuff that happens next is not my favorite, no details. But he is now hanging on Grandmas cellar, getting tender. Here is a picture of a very tired J and LB, normally I wouldn't post but hey this is real life and we don't always look perfect. 

So now I want a monogrammed gun for Christmas, thoughts? :)

Monday Munchies...

I would like to bring back Monday Munchies, because I love sharing recipes with y'all!

Today is a full meal, that is SUPER simple. Here is a picture first...

This meal is Paleo and super easy to make. First of all, wash and dry your chicken breasts. I got a honey balsamic seasoning at a local market here. Put olive oil and the seasoning in a bowl and coat the chicken with it. Bake in a 350 degree oven for 40 minutes.

The haricott vert is a simple bag from Trader Joe's, in the frozen section. I simply boiled it for a couple minutes and then added ham seasoning when it came out. The assembly was easy, but I wanted to add some kind of sauce...this is what came of it!

Honey Balsamic Sauce:
2-3 Tablespoons of Balsamic Vinegar
1 Tablespoon Honey
1 Tablespoon Mustard
Pinch of Cinnamon
Pinch of Salt
Pinch of Pepper 

Mix well and pour in bottom of the plate!  

This meal was fabulous and full of flavor, if you try it let me know!


The Big Move...

As some of you know, I am planning a possible to move to a wonderful, fabulous, fantastically southern city. I have spent a lot of time researching apartments, jobs, junior league (squeal), shopping, etc. This morning I started thinking about things that we all take for granted in our current towns that might not be available in our new cities!

I would LOVE to hear some ideas of things you have in your current cities that you COULD NOT live without in a new town.

I have a few things in my new town that I'm in LOVE with, obviously I'm going to share them with you!

This is a given. Trader Joe's is seriously an addiction for me.

Keeneland. I mean who doesn't love horse races and pretty hats?

An SEC school, with an amazing basketball team!

JCrew in the mall, obviously a requirement. :)

 A beautiful and lively downtown, full of young people.

These are just a few of my favorite things in this new city, what do you look for in a new place?

Extreme Couponer?

Wellll not quite but I could be considered close. Haha. I have been chatting with ladies about couponing and how exactly to make it work for you! I'm going to share some of my deals and how to make coupons your best friend. Although it takes some time, it's totally worth it! I promise. For these deals I shopped at Kroger and Target, both have great coupons and sales.

We eat a lot of meat in our house. Which can be expensive. These were originally $4.59 for the brats and $2.50 for the breakfast sausage. I had 50cent coupons for each of the brats, but at Kroger they will match your coupons up to a total of $1, so I got them for $3.59 a piece. Then there was a coupon on the brats that said free sausage with purchase of two brat, so that was free. What should have been $11.68 was $7.18!

Although we try to stay away from sugars, sometimes you need a bar on the go. Clif is always a great choice and these are a wonderful granola option. We are mostly Paleo but there are always exceptions. These are normally $2.50 a piece, making them 50cents each package. But I got these on "managers special" for $1.29 a piece, making them around 25 cents each! I bought 3 boxes I was so excited!

These are another splurge, I have been drinking coconut milk creamer for months but it's SO expensive. We drink coconut milk because we are mainly Paleo and Paleo means no dairy. I enjoy my coffee like a daily fix and I grew up with International Delight. ANYWAYS...These are normally anywhere from 2.99-3.50, depending on the store. They are on sale right now for 2.99 and I had a 55cent coupon, again turns into $1 off coupon for EACH one. Making them $1.99 a piece! Alright!

If you use a crock pot and don't use these, you are missing out. They are amazing and so so so easy!
They have been $1.97 and these come with 6 instead of 4, which is already a great deal. But I had $1 off for each off them, making them 97 cents for 6 liners! Super excited about one!

Anyone that knows me knows that I am a plug-in fanatic! Febreze is my favorite but they can run $9-$10 for a refill! What the heck?? These were on sale for $8 and I had a $3 off coupon, hello $5 for two of these heavenly scents. Success!

This is hands down the DEAL OF THE DAY!
I will try my best to explain it.
These were $2.50 on sale X 5 of them is $12.50.
But Target was doing buy 5 get $5 gift card, making it $7.50.
THEN I had Glade coupons that totaled $5 off, making it $2.50!!
$2.50 for all 5 of my favorite candles, Christmas scents too!
50 cents each for these is a STEAL!

I figured a post on clothing be appropriate. I spent a lot of time blogging about fashion before and I intend to continue that trend. Who doesn't love fashion? I have always been a bargain shopper but recently I have found myself more drawn to thrift stores and sale racks, just for the fun of it. If one of the pieces I'm was a great deal, I'll make note of it. Here are some of my OOTDs (outfit of the day) from the last couple months.

Fashion can be affordable! It is a great feeling to get a deal on something you love! Even better that I get to share it with y'all!
